Recipes:

Cucumber Dill Potato Salad

4 cups cooked new red potatoes cut in chunks

1/4 c. diced red onion

1/4 c. diced celery

1 c. Mayonnaise

1 c. sour cream

1 packet Cucumber Dill Salad Dressing Mix

Mix mayonnaise, sour cream and cucumber dill dressing mix together, fold in potatoes, onion and celery till completely covered. Let sit in the refrigerator or at least one hour, better even longer.

Creamy Margarita Lime Chicken Salad

Romaine Lettuce

Grilled Chicken (best if marinated with Tequila lime seasoning.

Red and Yellow Bell Peppers cut in thin slices

Cherry Tomatoes

Grated Monterrey Jack Cheese

Make a bed of lettuce with the Romaine arrange peppers, chicken, tomatoes and sprinkle cheese on top. Make the Creamy Margarita Lime Dressing Mix according to directions and pour over salad.

Spinach Salad with Raspberry Vinaigrette

On a bed of fresh spinach, place chopped hard boiled eggs, bacon bits, red onion rings, and grated cheddar cheese, make Raspberry Vinaigrette according to directions and pour over salad.

Pesto Garlic Eggplant and Bowtie Salad

Cook 1 cup bowtie pasta according to directions, drain well and cool. Cut 1/2 c. raw eggplant into 1X3 inch strips, Place in a hot skillet with 2 T. Butter and brown on all sides till starting to be transparent, drain well, and cool. Mix Pasta, Eggplant, 1/4 c. black olives, 1/3 c. sliced roma tomatoes, and 1/4 c. diced red onion in a large bowl. Mix Pesto Garlic Vinaigrette according to directions and pour over pasta and vegetables till completely covered.

Chill in refrigerator before serving. For best flavor chill over nite.
